Category Learning Modules
Over the years we have developed and delivered auditor competency requirements and assessment criteria for each of the product categories relevant to the BRC Global Standards. This allows us to maintain the quality and consistency of audits conducted globally.
Many UK and US retailers and manufacturers have expressed an interest in testing their internal auditors. In response to this, we're pleased to announce the development of our Category Learning Modules.
The BRC Academy's Category Learning Modules help you develop your product safety expertise.
Each module focuses on a specific category relevant to the BRC Global Standards. The new training courses allow you to gain a greater level of knowledge and understanding about each category.
Category Learning Modules are for you if you are:
- a member of a technical team moving from one speciality to another within your organisation;
- a member of a technical team new to your role or industry, and needing to get up to speed;
- looking to gain more in-depth knowledge on one product safety category;
- looking to broaden your knowledge into a new product safety category as part of your career development; or
- looking to move into a career as an auditor.
Like our e-Learning courses, Category Learning Modules are online; designed to be portable and flexible. This allows you to learn at your own pace, at a time and place of your choosing. They also allow you to focus on specific categories within the relevant Standard based on the needs of your role or where your interests lie.

Category 1: Raw red meat – register your interest
+-We have designed this Category Learning Module to provide an overview of category 1 of the BRC Global Standard for Food Safety – Red Meat – and ensure your knowledge is relevant and up to date. This knowledge will be assessed in the category exam.

Category 2: Raw poultry – available now
+-This Category Learning Module is relevant to category 2 of the BRC Global Standard for Food Safety: Poultry. The module provides delegates with an understanding of what the impacts on food safety and quality are likely to be, allowing the appropriate discussions with factory staff to be undertaken.
The module covers areas outside the Standard, such as welfare and veterinary inspection, so that if procedures relating to these are observed then it is understood why.The aim of this course is to provide delegates with relevant information covering:
- the different types of contamination found in a poultry factory, covering microbiological, chemical and physical;
- the controls expected to be in place to manage contamination;
- the practices to be applied when receiving birds into the lairage; and
- the different stages of the production process.

Category 13: Alcoholic drinks and fermented/brewed products – available now
+-We have designed this Category Learning Module to provide an overview of alcohol processing – category 13 of the BRC Global Standard for Food Safety – and ensure knowledge is relevant and up to date. This knowledge will be assessed in the category exam.
This course can be used as introductory training for manufacturing or retail technical and quality staff, to enhance their knowledge of the processes and food safety controls in alcoholic drinks production.
The course has been split into four sections covering:
- brewing
- cidermaking
- winemaking
- distilled products
The aim of the course is to focus the audit on the most probable hazards that occur in these processes.
